

At just 23 years old, Jessy left restaurant work behind to build a business she hopes will one day become a food truck.
Meeting Jessy surprised me.
At just 23 years old, she already owned her own food business. As someone only a few years younger, it was hard not to think about how much responsibility she had taken on so early in life.
Jessy prepares traditional Guatemalan dishes, including carne asada and homemade soups, after leaving her job at a restaurant because she wanted to build something of her own. Every afternoon, she opens her stand from 4:30 p.m. until 9:30 p.m., but her work begins long before that. Every meal is prepared in her own kitchen before she heads out to serve customers.
Although she has only been vending for two years, she's already built a loyal group of regulars. On a typical day, she serves around 60 customers, many of whom know her by name. Even on slower days, dozens still stop by.
What stood out most wasn't just her ambition—it was her optimism. Jessy genuinely enjoys talking with customers, and she already has her sights set on the future. Her goal is simple: one day, own a food truck.
Talking with Jessy reminded me that entrepreneurship doesn't always begin in an office or with a large investment. Sometimes it starts with a folding table, homemade food, and the confidence to believe something bigger is possible.
