When I visited Tacos los Cuates, I spoke with one of the employees rather than the owner. Even so, it didn't take long to understand what keeps customers coming back.
The business has been operating for six years and has expanded to five locations, serving customers throughout the area. Among the most popular menu items are the asada and al pastor tacos, staples that have helped build a loyal customer base.
The employee I spoke with explained that the food is inspired by traditions from Oaxaca, Mexico. Those roots remain an important part of the business today.
Like many food vendors, the work extends far beyond serving customers. Every day involves unloading equipment, preparing ingredients, setting up, and handling busy periods once customers begin arriving.
Despite the long hours and demanding schedule, Tacos los Cuates continues to grow, sharing Oaxacan-inspired flavors with both new and returning customers.
